Turkish-Style Stuffed Vegetables Recipe

* This is a great make-ahead dish/ In fact, it gets better if made the day before and reheated.
* You may stuff zucchini and small eggplant as well as bell peppers and tomatoes.
Ingredients
- Vegetables
- 4 medium vine-ripened tomatoes
- 8 small bell peppers
- ½ cup raw Farm Boy™ Calrose Medium Grain White Rice
- 350 g ground turkey, chicken, beef, or pork
- 1 cup minced onion
- 2 garlic cloves minced
- 1 ½ Tbsp Farm Boy™ Organic Tomato Paste
- 1 Tbsp extra virgin olive oil
- ½ tsp Farm Boy™ Organic Crushed Chili Pepper Flakes
- 1 tsp Farm Boy™ Organic Paprika
- ½ tsp ground allspice
- ½ tsp salt
- ¼ tsp black pepper
- Sauce
- 1 Tbsp Farm Boy™ Organic Tomato Paste
- 3 garlic cloves minced
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup boiling water
- ¼ cup chopped parsley for garnish
- Farm Boy™ Organic Plain Yogurt to serve
Directions
- Preheat oven to 375°F.
- For the vegetables: Cut the tops off and hollow out the tomatoes. Save the tops and mince the tomato pulp. Reserve. Cut the tops off the bell peppers. Remove and discard the seeds and veins, keep the tops.
- In a medium bowl, combine Farm Boy™ Calrose Medium Grain White Rice, ground meat, onion, garlic, 1 ½ Tbsp Farm Boy™ Organic Tomato Paste, olive oil, Farm Boy™ Organic Crushed Chili Pepper Flakes, Farm Boy™ Paprika, allspice, salt, and pepper. Mix until you have a uniform mixture.
- Divide meat mixture amongst the vegetables, filling loosely up to 1/4” from the top – this will allow for the rice to expand during cooking. Place the tops back on the vegetables.
- Arrange the vegetables in a 12” skillet or saucepan. They should be snug.
- For the sauce: In a small bowl, combine reserved tomato pulp, 1 Tbsp Farm Boy™ Organic Tomato Paste, garlic, salt, pepper, and boiling water. Add this mixture to the pan, pouring on top and around the vegetables.
- Cover the pan with a lid or foil. Place in preheated oven and bake until vegetables are completely tender and the rice is cooked through, about 45 minutes. Check once during baking to make sure the liquid does not dry out, adding more water if necessary to avoid scorching. Remove cover and place under the broiler for 2 minutes to give the top a bit of colour.
- Let vegetables rest for 10 minutes. Top with parsley and serve with Farm Boy™ Organic Plain Yogurt.
