There are dozens of ways to stuff an avocado, but we love a creamy, spicy shrimp salad to pile on ripe, buttery avocado halves.
Our recipe starts with sweet Farm Boy™ Wild Caught Canadian Cold Water Shrimp. Since they’re already cooked, you just need to thaw and use! Mix them with red onion, tomato, corn, jalapeño chili, and cilantro before adding mayonnaise and lime juice. Top avocado halves with the shrimp salad and then drizzle with Farm Boy™ Chipotle Mayo for an extra kick of spice.
Directions
- In a medium bowl, combine Farm Boy™ Wild Caught Cold Water Shrimp, mayonnaise, red onion, tomato, corn, jalapeño chili, cilantro, and lime juice.
- Add salt and pepper to taste.
- Mound on avocado halves and drizzle with Farm Boy™ Chipotle Mayonnaise.
- Garnish with cilantro leaves and serve.

- 5 Tbsp roma tomato diced
