Savoury Cheddar and Spinach Waffles Recipe

Chef’s Tips:
* If you don’t have buttermilk, make your own by mixing the same amount of cow’s milk with 2 tsp vinegar or lemon juice. Let stand 10 minutes before using.
* Feel free to swap out the cheese and/or add a bit of chopped bacon into the batter.
* Any leftover waffles may be frozen for quick breakfasts during the week. Simply pop them in the toaster.
Ingredients
- 2 cups Farm Boy™ Whole Wheat Flour
- 1 Tbsp baking powder
- ½ tsp Farm Boy™ Organic Granulated Onion
- ¼ tsp salt
- 2 Farm Boy™ Omega-3 Eggs
- 6 Tbsp unsalted butter melted
- 2 cups well-shaken buttermilk
- 1 cup grated Farm Boy™ Organic Medium Cheddar Cheese (100 g or ½ pack)
- 4 cups baby spinach chopped
- Farm Boy™ Avocado Oil Cooking Spray
- fried eggs to serve (optional)
- cooked Farm Boy™ Honey & Pork Breakfast Sausages to serve (optional)
- Farm Boy™ Campfire Baked Beans to serve (optional)
- Farm Boy™ Amber Maple Syrup to serve
Directions
- Preheat waffle maker and set a wire rack over a sheet pan. Preheat oven to 200°F.
- In a large bowl, whisk together Farm Boy™ Whole Wheat Flour, baking powder, Farm Boy™ Organic Granulated Onion, and salt.
- In a separate bowl, whisk together Farm Boy™ Omega 3 Eggs, melted butter, and buttermilk. Add grated Farm Boy™ Organic Cheddar Cheese and chopped spinach and mix well.
- Pour the wet ingredients into the dry ingredients and mix just until combined, making sure you don’t overmix.
- Grease the waffle maker with Farm Boy™ Avocado Oil Cooking Spray and pour batter into it. The amount of batter will depend on the size of waffle maker you have. Usually, it will take between ¼ cup and ½ cup. Close the lid and cook waffles until golden and crisp, 2-4 minutes. Remove to rack and place in the oven to keep warm as you cook the rest of the batter.
- Serve waffles with fried eggs, Farm Boy™ Honey & Pork Breakfast Sausages, Farm Boy™ Campfire Baked Beans, and Farm Boy™ Amber Maple Syrup.
