Pumpkin, Pecan, & Chocolate Protein Bars

Chef’s Tips:

* Make a double batch and freeze them in single portions.

* Feel free to substitute some of the nuts and chocolate for dried fruit.

* Instead of the three individual spices, use the combined amount of pumpkin pie spice.

Directions

  1. Preheat oven to 350°F. Grease an 8x8 pan or 2 loaf pans and line with parchment paper.
  2. In large bowl, combine Farm Boy™ Large Flake Oats, Farm Boy™ Vanilla Protein Powder, baking soda, baking powder, salt, Farm Boy™ Organic Ground Cinnamon, Farm Boy™ Ground Nutmeg and cloves.
  3. In another bowl, combine eggs, Farm Boy™ Ample Maple Syrup (or honey), milk, pumpkin puree, and hemp hearts. Stir in the dry ingredients until fully incorporated.
  4. Stir in pecans and ¼ cup chocolate chips. Spread batter in pan, smoothing the top.
  5. Bake for 25-28 minutes, until a toothpick inserted in the centre comes out clean.
  6. Remove from oven and immediately sprinkle remaining ¼ cup chocolate chips. Let them soften and then spread them out to cover the top.
  7. Let cool completely, cut into portions, and enjoy.

  • 1 cup Farm Boy™ Large Flake Oats
  • 3/4 cup Farm Boy™ Vanilla Protein Powder
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp Farm Boy™ Organic Ground Cinnamon
  • 1/4 tsp Farm Boy™ Ground Nutmeg
  • 1/8 tsp ground cloves
  • 2 large eggs
  • 1/4 cup Farm Boy™ Amber Maple Syrup or Farm Boy™ Pure Ontario White Liquid Honey
  • 1/2 cup milk or plant-based milk
  • 1 cup pumpkin puree
  • 1/4 cup hemp hearts
  • 1/2 cup chopped, toasted Farm Boy™ Pecans
  • 1/2 cup dark chocolate chips divided
