No-Bake Berry Coconut Cheesecake Parfaits

Chef’s Tips:
You can substitute graham cookie crumbs for the Farm Boy™ Coconut Cookie Chips.
If you like more sweetness in your filling, increase the amount of icing sugar to your taste.
If you prefer a saucier dessert, you can smash the berries and even add a bit of sugar to increase the liquid in the berries.
The components of this dessert can be made a day ahead and assembled the day you will serve.
If you use smaller glasses, you can make more servings.
Ingredients
- Crust
- 1 box Farm Boy™ Coconut Cookie Chips (170 g) processed into crumbs
- 2 Tbsp unsalted butter melted
- Filling
- 500 g Farm Boy™ Cream Cheese room temperature
- 1 cup icing sugar
- 2 tsp vanilla extract
- 1 Tbsp freshly squeezed lemon juice
- 1/4 cup Farm Boy™ 14% Sour Cream room temperature
- 1 cup whipping cream
- 2 cups fresh assorted berries sliced
Directions
- For the crust: In a medium bowl, combine Farm Boy™ Coconut Cookie Chip crumbs and melted butter. Stir until combined. Reserve 2 Tbsp for topping.
- For the filling: In a mixer bowl, combine Farm Boy™ Cream Cheese, icing sugar, and Farm Boy™ 14% Sour Cream. Mix with paddle attachment until combined, about 3-4 minutes.
- Add vanilla and lemon juice and mix until smooth.
- Add whipping cream and mix until smooth, about 3-4 minutes.
- To assemble the parfaits, layer cookie crumb crust, cheesecake filling, and berries between 6 glasses.
- Finish with cheesecake mixture and garnish with fresh berries and reserved cookie crumb crust.
- Chill for 1 hour, then enjoy.
