Chopped salads are back with a bang! Not only are they healthy, delicious, nutritious, and hearty, but they can be assembled ahead of time for work lunches or quick dinners.
Our Mediterranean Bean, Kale, and Quinoa Salad is a great combo of fibre, protein, healthy fats, and complex carbohydrates – it’s a lot of goodness! Because it can hold up, we recommend mixing a large batch, keeping it in the fridge, and eating it all week long, dressing it just before serving.
Directions
- In large bowl, place kale, quinoa, Farm Boy™ Organic Chickpeas, Farm Boy™ Organic Bean Medley, bell peppers, cucumbers, grape tomatoes, red onion, and parsley.
- Toss to distribute everything evenly.
- Add Farm Boy™ Mediterranean Dressing to taste and toss well.
- Serve, topped with crumbled Farm Boy™ Cow and Goat Feta Cheese and Farm Boy™ Jumbo Kalamata Olives.

- 4 cups kale thinly sliced

- 1 can Farm Boy™ Chickpeas Canned Beans (398 ml) drained and rinsed
- 1 can Farm Boy™ Four Bean Medley Canned Beans (398 ml) drained and rinsed
- 1 red bell pepper diced
- 1 yellow bell pepper diced
- 2 large Lebanese cucumbers diced
- 2 cups cherry tomatoes
- 1/3 cup red onion minced
- ½ cup parsley chopped
- Farm Boy™ Mediterranean Dressing to taste
- ½ cup Farm Boy™ Cow and Goat Feta Cheese crumbled
- ½ cup Farm Boy™ Jumbo Kalamata Olives
