Chef’s Tips:

* If you feel like combining pulses, you can add any other canned beans you like.

* Instead of Feta, you can use goat or Parmesan cheese.

Directions

  1. Place broth in medium saucepan and bring to a boil. Add pearl barley and salt and reduce the heat to medium low. Simmer, covered, until barley is tender and most of the liquid has been absorbed, 25-30 minutes. Barley will have a chewy texture and there may be some liquid left. Drain and spread barley on sheet pan to cool grains completely.
  2. In large bowl, combine cooled barley, chickpeas, tomatoes, cucumbers, bell pepper, red onion, parsley, dill, olives and feta cheese.
  3. Add dressing to taste and toss gently but thoroughly. Chill for 30 minutes and serve.

  • 1 cup Farm Boy™ Pearl Barley
  • 3 cups Farm Boy™ Chicken or Vegetable Broth
  • 1 tsp salt
  • 1 can Farm Boy™ Organic Chickpeas drained and rinsed
  • 1 and 1/4 cup grape tomatoes halved
  • 1 and 1/4 cups (3 units) lebanese cucumbers diced
  • 1 and 1/4 cups rainbow bell peppers diced
  • 3/4 cup red onion mined
  • 1/2 cup flat leaf parsley chopped
  • 1/4 cup dill chopped
  • 2/3 cup Farm Boy™ Pitted Green Olives quartered
  • 1 pack Farm Boy™ Barrel Aged Feta Cheese crumbled
  • Farm Boy™ Greek Dressing to taste
