Chef’s Tips:
* If you have yellow squash, you can use some along with the zucchini.
* If you have some bell peppers, you can add them as well.
* Feel free to add walnuts or pine nuts to add some crunch.
* You can use a combination of herbs: chives, basil and parsley would be fantastic.
Directions
- Trim ends of zucchini and slice lengthwise into ¼” thick slices.
- Place on shallow tray and drizzle with 4 Tbsp Farm Boy™ Lemon Garlic Dressing, Farm Boy™ Organic Oregano, Farm Boy™ Fleur de Sel, and black pepper, then toss to coat well. Let marinate for 30 minutes.
- Heat grill over high heat until it reaches 450°F.
- Place zucchini on grill and cook, covered, for 3-4 minutes, until they form grill marks. Flip zucchini and cook the second side for 3-4 minutes, or until tender.
- Remove zucchini to the same tray and cool down for about 10 minutes, then arrange on a platter. Drizzle any remaining juices from the tray onto the zucchini.
- Top with Farm Boy™ Barrel Aged Feta. Garnish with mint leaves and lemon wedges and serve.
