Cheesy Spinach and Sundried Tomato Frittata

Directions

  1. Preheat oven to 350°F.
  2. In large bowl, place eggs and beat them lightly.
  3. Add Farm Boy™️ Cottage Cheese, Farm Boy™️ Farmstead Gruyere, spinach, Farm Boy™️ Sundried Tomatoes, salt, and pepper.
  4. Mix well and pour into oiled and heated 7” oven-proof frying pan.
  5. Cook over medium high heat for 10 minutes, then bake for 15-20 minutes, or until eggs are set and tester comes out clean.
  6. In small bowl toss arugula with Farm Boy™️ Lemon Garlic Dressing.
  7. Un-mold frittata and serve with arugula salad.

  • 5 eggs
  • 3/4 cup Farm Boy™ Pressed Cottage Cheese crumbled
  • 1/2 cup Farm Boy™ Farmstead Gruyere shredded
  • 1 cup spinach chopped
  • 1/4 cup Farm Boy™ Sundried Tomatoes diced
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 1 Tbsp Farm Boy™ Vegetable Cooking Oil
  • 1 cup baby arugula
  • 1 tsp Farm Boy™ Lemon Garlic Dressing
