When you’re looking for tasty lunch ideas for Mother’s Day, you can’t go wrong with a salad. Light and refreshing, these salad recipes are anything but boring! We love making our lunch salads exciting with the help of fruits, cheeses, meats, crunchy add-ins, and delicious Farm Boy Dressings. One of the many benefits to making a salad for Mother’s Day is that they’re low maintenance, so you can spend more quality time with Mom and less time in the kitchen. We suggest packing up a couple of these salads and taking them outside to enjoy lunch al fresco. Perfect for a sit-down meal or a casual picnic, here are six of our favourite salad recipes.

Three Melon, Bocconcini, and Prosciutto Salad Recipe

This salad has a gorgeous array of colours and flavours! A deliciously easy way to wow Mom, this salad recipe uses fresh, juicy honeydew, cantaloupe, and canary melon. Combined with creamy mini bocconcini and our salty Prosciutto, it’s a bright, elegant salad. If you’d like to add even more colour and sweetness to this recipe, try throwing in some fresh watermelon!

Fresh Herb Salad Recipe

Delicious, light, and packed with flavour, this fresh herb salad is a perfect side for Mother’s Day lunch! In our Farm Boy stores, you’ll find loads of crisp, fresh herbs to create this salad, like parsley, mint, basil, dill, and chives. To add more bulk to this salad, we included peas, radishes, cucumbers, and tender greens, but you can always opt for your own favourite veggies! Finished with Farm Boy™ Apple Cider Vinaigrette and a sprinkle of Parmesan cheese, the clean flavours of the fresh herbs are really the star of the salad show. 

Berries, Greens, and Buffalo Mozzarella Salad Recipe

Beautiful and colourful, this Mother’s Day lunch idea uses a combination of juicy berries and creamy cheese for a green salad that pumps up the flavour! As elegant as it is tasty, we chose to use blackberries, strawberries, and blueberries, but you can use whatever fruits are Mom’s favourite! We suggest opting for whatever’s seasonal and freshest to get the best bite. 

Spicy Shrimp Salad Stuffed Avocados Recipe

Fresh avocados make a tasty vehicle for this shrimp salad. The buttery avocado is filled with a creamy, spicy shrimp salad made using our Wild Caught Canadian Cold Water Shrimp. These shrimp are already cooked and flash-frozen to lock in their ocean-fresh flavour, so you simply thaw and enjoy! Full of protein and healthy fats, this recipe is a delicious lunch idea for Mother’s Day!

Beet, Orange, and Bocconcini Salad Recipe

Fruit and cheese are some of our favourite mix-ins when we make our fresh salads. We love the warm, sunset hues of this Beet, Orange, and Bocconcini Salad, which is delicious for any season, but especially for an occasion like Mother’s Day! Earthy, citrusy, sharp, and creamy, we dressed this dish with our Farm Boy™ Balsamic Vinaigrette for added zing without being overpowering.

Warm Octopus and Potato Salad Recipe

Unexpected and elegant, this warm potato salad will transport Mom to the sunny coasts of the Mediterranean. Loaded with flavourful aromatics like paprika, garlic, and cayenne, this salad recipe comes together quickly when using pre-cooked octopus. Ready in just 15 minutes, it’s a delicious, exotic, and surprisingly simple lunch idea for Mother’s Day.

Tea Sandwiches

Tea sandwiches are a classic part of an afternoon tea, and a wonderfully easy option if you’d like to theme your lunch around that idea. With minimal cooking involved, the majority of time spent arranging tea sandwiches involves simply chopping, spreading, and slicing! It’s a breeze to recreate the elegance of a tearoom in your own home with just a few different finger sandwich flavours. We like to slice our sandwiches in a combination of rectangles, triangles, and circles (using a cookie cutter) for visual variation. (If you have kiddos in tow, try some kid-friendly faves like peanut butter and jelly or chocolate hazelnut spread with berries.) Trim the crusts off all your sandwiches for extra sophistication and enjoy!

Chicken Salad

Ingredients: shredded chicken, mayonnaise, shallots, tarragon, Dijon mustard, salt, pepper, white bread.

A classic tea sandwich choice, this chicken salad recipe can be ahead of time and spread on toasted white bread before Mom arrives. Top your chicken salad with sliced watercress or cucumbers for added crunch!

Mother's Day lunch idea: Japanese-style egg salad tea sandwiches

Egg Salad

Ingredients: hard boiled eggs, mayonnaise, chives, Dijon mustard, salt, pepper, paprika, white bread.

It’s not a spread of tea sandwiches if there’s no egg salad! This recipe is creamy, smoky, and full of that craveable umami flavour. Another recipe that can be made ahead of time and assembled the day of, be sure to keep it in an airtight container in the fridge.

Ingredients: sliced cucumber, softened salted butter, grated lemon zest, parsley, dill, white bread.

Delicate and refreshing, the classic cucumber sandwich depends very much on using good salted butter. Mix your butter with the lemon zest and fresh herbs before spreading it on bread and adding a layer of thinly sliced cucumber. Perfect for enjoying with your pinkies up!

Ingredients: ham (or prosciutto), Cheddar cheese, mustard, mayonnaise, wheat or white bread.

Ingredients: cream cheese, smoked salmon, sliced cucumber, dill, white or pumpernickel bread.

Combine your softened cream cheese with fresh dill and spread it onto your bread of choice. Generously layer Farm Boy™ Wild Smoked Sockeye Salmon or Farm Boy™ Cold Smoked Atlantic Salmon and your thinly sliced cucumber for added crunch. Similar to the classic bagel and lox, but in an elegant, bite-sized format!

Paired with the herb butter and microgreens, this salad has a wonderfully fresh flavour that is deceptively simple but shouldn’t be overlooked. We also love the bright pop of colour peeking out from the radishes.

Creamy Asparagus Soup Recipe

Smooth, creamy, and full of flavour, this soup recipe makes the most of a beloved spring and summer vegetable: asparagus! A delicious lunch idea for Mother’s Day, it can also be an appetizer or light dinner. We like finishing this soup with a swirl of whipping cream, asparagus ribbons, Farm Boy™ Microgreens, and a few cracks of freshly ground black pepper.

Creamy Tortellini with Peas and Pancetta Recipe

This creamy pasta dish uses a classic northern Italian recipe, and in addition to tasting amazing, it also comes together so quickly! Made using our Fresh Cheese Tortellini, this lunch dish has a rich, creamy sauce that’s complemented by the fresh peas and salty Mild Pancetta. We used fresh English peas for this recipe, but you can use sliced sugar snap peas if you prefer a harder crunch (although the dish may not look as refined).

Cheesy Egg Bites with Prosciutto and Pesto Recipe

Inspired by Spanish tapas, this dish makes an excellent starter or part of a larger meal the whole family can share. While you can make this recipe with grilled shrimp and add it to the sauce afterwards, we suggest cooking our Farm Boy™ Raw Shrimp directly in the spicy garlic oil to better soak up all that gorgeous flavour. Be sure to serve it with lots of crusty bread for dipping!

Cheesy Spinach and Sundried Tomato Frittata Recipe

Not quite a quiche, and not quite an omelette—it’s a frittata! Consider it a crustless quiche, if you will—one that’s cooked in a skillet before being transferred to an oven. Our recipe is perfect for brunch or lunch on Mother’s Day and comes with a fresh arugula salad tossed in our beloved Lemon Garlic Dressing. (Not into arugula? No-Bake Berry Coconut Cheesecake Parfaits Recipe

These sweet, individually-sized desserts are easy enough for even the most inexperienced baker to execute! Satisfy Mom’s cheesecake cravings with this luscious, layered treat. We opted for using fresh berries with our recipe, but if Mom is into more tropical vibes, why not try mango and papaya instead?
